
FED X TATSUYA Recap
The collaboration with Tatsuya happened naturally—he’s one of our close friends and currently works as a sous chef at Ekstedt, a Michelin-starred restaurant in Stockholm. While he was visiting Bali, we invited him to do a special dinner at FED. The menu he created was a unique fusion of his Nordic and Japanese culinary background, but entirely rooted in local ingredients from Bali. His vision was to introduce a new flavor experience to our guests—something minimal, precise, and deeply seasonal. The response from guests was incredible. Many were surprised, as Nordic cuisine is almost unheard of in Bali. Tatsuya’s dishes brought subtlety, technique, and a quiet elegance that stood out, and it sparked real excitement among diners who were tasting something truly different for the first time.
